Notes to the Table

Sodium Target Development: The draft targets are sodium levels for different food categories to be met by 2016 by companies for each food category. By meeting these targets the sodium content of the Canadian food supply would decrease, resulting in a decrease in sodium consumption by Canadians to a population average intake of 2,300 mg of sodium per day. This presumes that eating patterns remain the same. The 2004 Canadian Community Health Survey 2.2 (CCHS, 2.2) was used as the basis for estimating Canadians' eating patterns and sodium intake. Draft 2012 and 2014 milestones have also been set to allow Health Canada to monitor progress and determine if adjustments are required for the 2016 targets.

Health Canada used Canadian A.C. Nielsen market volume data from 2008 (Group I foods) and from 2009 and 2010 (Group II foods) to design a plan for sampling individual products and for grouping them into subcategories. For these products, sodium levels from the Nutrition Facts table were obtained and used to estimate the average sodium content, range and distribution of sodium levels within each category. The sales weighted average (SWA) sodium content in milligrams per 100 grams was calculated based on approximately 80% or more of the market share in kilograms for each prepackaged food category. In general, the draft 2016 SWA targets are percent reductions from the current SWA sodium level. The majority of the draft 2016 maximum targets are set based on the 75th percentile of the sodium levels observed in a food category. The targets for Group I foods were adjusted based on stakeholder feedback.

By the end of 2016, companies should aim to meet both the 2016 SWA and the maximum target for each food category.

The symbol "I-" that precedes the name of a food category indicates a Group I food category. Similarly, the symbol "II-" indicates a Group II food category.
