Allergen Control, a Manufacturer's Perspective

Allergen control within the Food Industry has driven significant changes and challenges over the last decade. Development of new technology, manufacturing strategies, global sourcing and new regulations have forced allergen control to even higher levels of diligence. Any food allergen program must still include accuracy in labelling, supplier interaction, operational strategies, education and awareness, and consumer communication. These will all be discussed.
